The 2 easiest meals ever!

I cannot bake to save my life, but I can throw a last minute meal together with random crap I find in my pantry. Somehow, the stars align and it often works for me (Thank you, Jesus!).

Here's two recipes that I have thrown together that have worked...and the best part, they are not only delicious (and kid friendly), but they take practically no time or effort.

Chicken Pot Pie


Ingredients: one can of chicken pot pie soup (we prefer Progresso), 2 pie crusts (Great Value for Walmart - you don't need anything special), and one package of freshly frozen vegetables mix (we do Bird's Eye rotini and vegetables in garlic butter sauce) - Yes I know what you are thinking? Pasta inside my chicken pot pie? Trust me, it's delicious! 

"Steam" the veggie bag in the microwave first for about 4 minutes.


Preheat oven to 350 degrees. 

Simply layer a cake pan with the first pie crust, dump the can of chicken pot pie soup in, add the veggie/pasta mix once it's finished in the microwave and then cover with the second pie crust. Bake 50 minutes on 350 degrees. Viola! 




Soup and Rice


Ingredients: one can of soup (we prefer beef with vegetables from Progresso) and a cup of rice.
This one is so easy, it's embarrassing. 
Boil rice. Heat up can of soup (of your choice) on the stove top.
Dump soup over rice. 
Literally the easiest meal on the planet and it's tasty!
We have also tried it with soup over mashed potatoes (really good), but that meal takes a little longer since I have to make the mashed potatoes from scratch cause I cannot stand instant mashed potatoes. 


Hopefully, you can find this stuff already in your pantry and make the easiest and tastiest meals for dinner tonight! Other pluses, these meals are cheap and since they cannot be easily screwed up, they make for great opportunities to get the kids involved and let them help!
