If you are like most mothers, you need dinner to be made fast and most importantly, it needs to be kid friendly. Lucky for my picky eaters, my husband is just as picky as them. So they get away with eating the cheese, bread, potato and meat diet. My mother use to make a version of this when I was little and it's definitely a "clean plate" meal in our house nowadays.
Best of all, you probably already have these ingredients in your fridge/pantry.
Preheat oven to 350 degrees. Brown 1 pound of ground beef on stove top. Recipe calls for 1 cup of shredded cheddar, but in this house, we double cheese in every meal we make. So...mix 2 cups of shredded cheddar, 2 eggs, 1 cup of milk and 1/2 cup of Bisquick in bowl, blender or mixer (whatever you use). Put browned beef in a pie pan and cover with mixture. Bake for 30 minutes and then enjoy! Another great thing about this meal is that it is delicious reheated for leftovers and since my husband and I despise leftovers, that's a serious plus!
